Basically the liquid contains a lot of oxygen, enough for your body to actually use when it's in your lungs. Unfortunately it's much heavier and thicker than air, which our lungs are designed for, so it's a lot more effort to breath in and out. Also because we aren't used to breathing liquid our natural response to out lungs being filled with water is violent evacuation of the lungs by any means necessary.
